How do proteins behave?
Proteins play an extremely important role in nature, and this kit introduces students to how proteins behave.
Students perform five experiments: the isoelectric precipitation of casein, the separation of albumin and gelatin by ammonium sulfate fractionation, the effects of acetone on solutions of albumin and gelatin, the heat of denaturation of albumin, and the precipitation of protein by lead acetate.
Includes materials for 8 student groups: one vial each of albumin, casein, gelatin, and NaOH; one bottle each of glacial acetic acid, ammonium sulfate, and lead acetate; four bottles of acetone; 24 student data sheets and an instructor’s
manual. Also includes assessment manuals and scoring sheets.
